Lemon, Coconut & Cashew Goodie Balls as a Homemade Snack

Makes 18 balls      

Ingredients:

1 cup cashews

8 medjool dates, pitted

1 cup desiccated coconut

1 lemon, juice & rind

1 pinch salt

½ cup desiccated or shredded coconut

Method:

  1. In a food processer, blend all ingredients until a rough paste forms.  Depending on how much juice is in the lemon you may need to add additional lemon juice or water to bring the mixture together.
  2. Form in to 18 balls.  Coat in coconut.
  3. Put in fridge to set.                                                                                                                                  

Per serve:  598kJ, 2.4g protein, 9.9g fat (5.3g saturated), 10.9g carbs (7.5g sugars), 2.5g fibre
